Waking up bright and early to bake before the sun comes up has become the norm for Elaine Brown, owner of Red Eye Bakery in Downtown Wilmington. Formerly a nuclear worker who traveled a lot with the job, Elaine developed a love of baking in her leisure time and soon realized she was quite good at it. Her signature recipe was her rosemary bread; she then worked hard to master the perfect croissant.
In 2016, Elaine came upon the triangular-shaped building toward the north end of North 4th Street in the Brooklyn Arts District. She opened Red Eye Bakery there in January 2017. In partnership with her daughter, Melissa, she expanded her repertoire of baked goods to include cinnamon rolls, biscuits, brownies and more.
The selection on display all looks so delicious, it’s tough to choose just one item. The aroma of baked treats, freshly made each day from scratch, and homemade bread is divine; yet, it pairs so well with the earthy smell of freshly brewed coffee from Black Rifle Coffee Co. that is also available.
You can buy food and drink to go or relax for a while in the casual seating area. The bakery has an open kitchen so you can chat with the bakers while they work. This fulfills one of Elaine’s goals: to have a bakery with a fun, friendly atmosphere where she knows her customers by name. She also wanted a place where you can come for mom-style, homemade comfort foods made with high-quality flour, butter and chocolate.
Baking from scratch takes a lot of time…and a little love! Believe us when we say your heart will be full when you try the bacon-cheddar biscuits or the chocolate-filled croissants!
