Brian “Wes” Westlye knew he was stirring up something different when he opened his first Rebellion pub in Washington D.C. a few years ago. His motto “a little Rebellion is a good thing” gave him free reign with his business model; however, the business is named after a brief, yet important historical event―the 1791-1794 rebellion that erupted over the tax on distilled spirits. In recognition of this piece of history, the DC location’s extensive whiskey collection became a feature that gained attention.
However, Rebellion didn’t gain notoriety on the numerous bourbons and whiskeys alone. Brian wanted to provide upscale dining without the price, so he worked with an executive chef to create affordable American comfort food with a southern twist. Everything is made from scratch from high-quality ingredients and the menu is changed regularly to keep you coming back for more.
Brian is the founder of Rebellion and when his long-time friend, John Bradley, moved to Wilmington, he knew there was a great opportunity to expand to southeastern North Carolina. Together, they secured a great property on South Front Street in Downtown Wilmington and John became managing partner in charge of the new location.
Some naysayers said the property was cursed, a notion that made John more determined to succeed. Since opening last year, Rebellion has experienced great growth. John wanted it to be a place where people can get away from politics and feel comfy. He says that locals appreciate the good food, good drink and good conversation.
The menu is developed centrally for consistency at all three Rebellion pubs; however, it is adapted at each location to suit regional tastes. Chicken wings are the number one seller at Rebellion NC and the Rebellion burger is top of the burger options. If you’re looking for something new, the legacy burger changes weekly according to new ideas from the line cooks―and the originator of each new variation gets to name the burger.
Rebellion has gained a loyal following and people of all ages enjoy the friendly atmosphere. With quality food, a wide selection of drinks, regular live music, optional mezzanine and open-air seating areas, everything is good at Rebellion. It even has a communal table that seats 30 people and is a great event space for parties of up to 300 people. Come and see for yourself.
